Loaded Turkey Burgers
Serving size 4 burgers (4 oz each)

  • 16 oz (1lb) ground lean ground turkey
  • 1 small red bell pepper, finely diced
  • 5 scallions, finely diced
  • 2 garlic cloves, minced
  • 2 tsp freshly minced hatch pepper (substitute Serrano or Jalepeno)
  • olive oil for sautéing
  • fresh ground pepper

Toppings can be varied, but we used….

  • Tomato
  • Spinach lettuce
  • Shredded Mexican cheese
  • Ketchup
  • Mustard

In a fry pan,  add in the red bell pepper, scallions, garlic cloves, and hatch pepper. Sauté for approximately 2 minutes till veggies have soften a bit.  Remove from heat & cool veggies until you can handle them (just a minute or so).
In a medium sized bowl, combine the veggie mixture with the ground turkey & freshly ground black pepper.
Grill (on a George Foreman in our case) or fry until cooked through. Top with shredded Mexican cheese, fresh roma tomato, spinach lettuce, ketchup & mustard. Serve & Enjoy!
This was our first burger since we’ve been back in the states! It was SOOO YUMMY (not to mention healthy!)

OK, what’s the delay? When am I going pick up a cooking magazine at the grocery store, and see your food pictures and recipes. Didn’t your mother teach you to SHARE?
