Okay, so these aren’t the ‘prettiest’ cookies in the cookie tin, but man do they taste good!
The other day we were headed home from an exhausting trip up to Columbus, when I remembered we needed bring a dessert to our friends place for the big 12 championship game! I only had 45 min between the time we arrived home & the time we were suppose to be at our friends, so I started searching the iphone for recipes!
- ½ c. Butter, Softened
- 1 c. white sugar
- 1 tsp Vanilla
- 1/4 tsp Mint (or peppermint) extract
- ½ teaspoons Salt
- 1 whole Egg
- 6 Tbsp of baking cocoa
- 2 Tbsp of melted shortening or butter
- 1 cup All-purpose Flour
- ¼ cups Soft Butter
- 2-½ cups Powdered Sugar
- 1/4 teaspoons Pure Peppermint (or mint) Extract
- 2-4 Tablespoons Milk
- Red food coloring (if desired)
- Garnish, Andes Candies, crumbled
Cookies…Makes about 3 dozen
Pre heat the oven to 375
Melt the 2 Tbsp of butter of shortening & set aside of slightly cool. When cooled, stir in the cocoa powder with a fork till combined.
Using a hand mixer, beat butter on high for 30 seconds. Beat in sugar, vanilla, peppermint (or mint) and salt. Beat in the egg and cocoa mixture. Add in the flour until well combined.
Form small round balls of dough. Place on a cookie sheet that’s been lined with parchment paper. Flatten the cookies slightly with a glass dipped in sugar. Bake for approx 8 minutes.
Cool on cookie sheets one minute. Then remove to a cooling rack to cool completely.
Combine all ingredients (except milk) in bowl. Add the milk until you reach desired consistency.
Frost cooled cookies & top with candies!
… Also, the reason there is only one cookie in this picture is b/c the rest were totally gobbled up! I actually hid this one away to snap the shot 🙂
