Yep. We bought some beef! 130lbs hanging weight…which translates to A LOT less in actual weight 🙂 but regardless. Grass Fed, Organic Yumminess!

Tonight I decided to use our first package of meat to make an easy beef stew.
OH, was it good!

2-3 lbs stew meat
2 Tbsp flour
1 Tbsp olive oil

1 can petite diced tomatoes
1 can water
1 package lipton dry onion soup mix
1 tsp oregano
1 tsp marjoram
1 tsp thyme
1 large onion, sliced
1/8-1/4 c. corn starch + more water

Coat the stew pieces in flour and brown in a skillet for a few minutes (turning to brown on all sides).

Put all of the ingredients (except the cornstarch) in the crockpot. Turn it on high for one hour. Then turn it down to low and cook for an additional 4 hours till meat is tender and onion is cooked. During the last 30 min/hour of cooking, combine some cornstarch and cold water in a tupperware. Shake to combine then pour it into the stew mixture to thicken the gravy.

Serve over rice.

YUM! So good!!
