Greek-ish Quinoa

I was trying to come up with a good, quick dish for Pax for dinner tonight. We’re having french dips and I didn’t think that would go over too well (or easily!) And so, this recipe was born.

I totally didn’t write down any measurements since this was just tossed together…

  • cooked quinoa
  • chickpeas (pulsed in food processor)
  • yellow spring squash (shredded in food processor)
  • raisins minced in food processor
  • feta cheese crumbled
  • juice of one lemon
  • 1/4 c. (ish) of olive oil 
  • Salt & Pepper
  • cumin
  • smoked paprika
  • dashes of sesame oil

Toss & serve 🙂
