What we’re eating

My good friend Carey has been posting her meal menus on her blog and I LOVE it! She’s an amazing chef and she inspires me to make yummier and more ambitious meals.

So in the spirit of Carey~ here’s what we’re eating this week!

Monday: Pesto Shrimp with pan roasted tomatoes, caramelized onions, garlic, capers, lemon, olive oil and parmesan cheese

Tuesday: Ina’s scalloped tomatoes… OH MY if you haven’t had these, make them. Ridiculous. and a green salad

Wednesday: Small group bible study ~ tacos ~ I’m making fresh salsa from the garden to contribute!

Thursday: Greek Panzanella ~ courtesy of Ina again. One of our favs

Friday: Cauliflower soup~ thanks again Carey! I often miss the pioneer woman recipes amidst all of her other postings. I really need to just subscribe to the food 🙂
