What we’re eating

Monday: Baked chicken (slow roasting in the oven all afternoon) with roasted asparagus (and lemon/parmesan) and baby reds

Tuesday: Eggplant parmesan with steamed garden green beans

Wednesday: Bible study, BLTs. I’m making dessert. Not sure what kind yet!

Thursday: Taco Pasta Bake

Friday: Curried coconut & butternut squash soup with caramelized onion and applewood smoked gouda grilled cheese

Extras: I made some tomato basil soup yesterday~ my fav. I’m cooking & freezing it while the tomatoes are still ripe for picking. My garden is just about seen it’s last day 😦 which is sad!! But it’s been a good run. Still lots of yumminess at the farmers market.
