Mmm-Kay.


On Wednesday nights our small group hires two babysitters so that the adults can actually have some uninterrupted conversations about Jesus (and other stuff :)). Oh, and we can also eat hot food without share. THAT is a PLUS.

So a few weeks back… everyone leaves and I’m getting Pax ready for his bath.

Notice anything a little off here… Yeah. Thought so. HOW does that even happen on accident??

Also, how do you bring this up to the sitters….? Don’t know whether to laugh or cry!

P.S. these lovely ladies love our kiddos AND they have 8 to take care of between the ages of 1.5 & 9, so  I guess they are over worked.

Babysitters & Date Night

Steve & I have been blessed enough (and strong enough) to leave Pax in the care of others overnight a few times already in his short little life. Let me start by saying, it is SO hard to leave him~ but it is also so incredibly good for us and our marriage.

Over the last few months we’ve been talking about how important it is to spend time together, just the two of us. Date night is a must in marriage (in my humble opinion)!!

Up to this point, we had only left Pax at night time with our folks and our day time babysitter who we love like she’s our blood. Last night for the first time we left pre-bed time and came back post-bed time with a non “family” member. We are so blessed to have friends who love and care for our son. Here’s the key for us … would the sitter/caregiver save our son if the building was burning to the ground or run out the door and save themselves? Obviously, we’re looking for the former!!! And I can say without a shadow of a doubt that our sweet sitter from last night wouldn’t think twice about it. We are so blessed by her and her love for our son!! Thanks GeNae … or “Nae” as Pax would say 🙂

Oh, and not only did we come home to a soundly sleeping child, but one who is now able to clearly articulate the word “TEXAS”

Score. I think we’ll keep her.

Next time GeNae, you must teach him “Hook ’em Horns”

Greek Dip (and Cheesy Ham and Quinoa cups)

We had some friends over last night to play Euchre.

We would call Euchre a “Wisconsin” card game, but apparently, Indiana and Illinois like to say they own it too. Regardless, it’s a fun game to play with 4 people, good food and refreshing drinks.

I made two yummy recipes from Iowa Girl Eats website~

First, I made the cheesey, ham, quinoa cups ~ They were definitely yummy (but I forgot to spray the pan the first time!! AH. So not cool. They still came out, mostly :)). The second batch was better. Pax LOVED LOVED them. I’ll be making them again just for him. I modified Kristen’s recipe slightly… you essentially dump 3 eggs, 2 c. shredded yellow squash, 2 c. cooked quinoa, 2 c. shredded sharp cheddar, 1 tbsp grated red onion, 5 chives (diced), 2 tbsp grated parm cheese, 1/4 c. chopped fresh parsley (this is SO good in here!), 1 c. finely diced ham, salt and pepper in a large bowl. Stir to combine.

Then SPRAY a mini muffin pan and load up the cups 🙂 Bake at 350 for 20-25 min. Kristen said 15-20 but I found mine needed to bake a bit longer with the changes. Next time I think I’d add more seasonings as well. They could have used a bit of kick! Head over to IGE to see the amazing photos 🙂

The second recipe was this AMAZING greek dip. There aren’t words for how awesome this dip was… so awesome that I just ended in a preposition… (nerd alert).

You essentially just layer greek yogurt (I used Fage 2% greek yogurt) and hummus (I used roasted pinenut from Sabre) on a plate and then top with your traditional greek-ish toppings. I used tomatoes and cucumbers from the garden and then kalamata olives (pitted obviously), chives, and red onion (finely minced). Then you top it with parsley for a lovely look. I was suppose to put feta on top but I totally forgot!! I didn’t miss it though. 🙂 The Hummus was too darn good. Here’s the link to the original recipe.

Make this for a party or for a meal… full disclosure. I did both. Two days in a row. 🙂 First for the card game and then for my lunch the next day. The first night we served with crackers and then for lunch I ate it with fresh cucumbers. The hummus makes this dish so make sure you make or buy a tasty brand!

Feta Cheese & Kalamata Olives

Saturday Pax and I went grocery shopping. On the menu for this week: Greek Panzanella Salad. Yum!

I had Pax in the cart and went to grab some olives from the salad bar area. He kind of freaked out and acted like he wanted one. I said something like “oh Pax, you won’t like those.” But then I noticed a lady next to us…felt like a bad mom for dismissing my kid…and said something like, “well, okay, you can try one when we get home”

*yes, I talk to my kid like he’s grown up even though he probably doesn’t understand half of what I’m saying

*yes, I realize that my need for approval from the random lady at the grocery story is shameful

Fast forward a few hours… I’m chopping up ingredients for the salad while Pax eats dinner. I decide to let him try a little bit of a kalamata olive. Um yeah, he gobbles it up. So then I give him feta cheese, same result. Seriously, what 14 month old likes these things? Steve doesn’t even like olives. 🙂

The moral of the story…I will try my darnedest not to tell Pax what he will and will not like. Instead, I will just let him try everything 🙂

*Side note. We have one a shopping cart cover that I bring with us to the store. It’s nice b/c Pax doesn’t put his MOUTH on the handle bar 🙂 EVERY time we go to the store, some grandma aged woman approaches me and asks where I got it. Every. Single. Time. 🙂

Randoms

  • One nap or two. We are caught in the middle right now. When Pax is home during the day, I can get two naps in…which still seems to work better. When he’s at Mary’s she can only seem to get one (longer) nap in. He always falls asleep on the car ride home and then wakes up super cranky. the next hour or so is incredibly unpleasant. For now, we’re just kind of in limbo.
  • Neighbor’s dogs… our next door neighbor has SIX. but since we talked to them about the incessant barking last year, they’ve been better. Unfortunately, another family just moved in with two dogs (a few houses down) and they leave their dogs out at all hours of the day/night. Last night they were barking continuously from 11-midnight. Yep. Fun stuff. Luckily it hasn’t disrupted the baby’s sleep (yet).
  • Steve’s working this weekend 😦 #bummer. Oh the joys of having a spouse in retail. Though, I’m not complaining (too much) b/c I’m so thankful he HAS a job. It is truly a blessing.
  • The most common question we get asked “Is he walking yet” Nope. He’s not.

Time to work on a paper while Pax naps!

Full-time but Flexible

On a typical day, I get up when Steve goes to work and start getting things prepared for the day (e.g., clean up remaining dishes, prep Paxton’s meals for Mary’s house, pack the diaper bag, and get dressed…okay, full disclosure: if I’m not teaching I totally stay in yoga pants and a tank top.] Pax wakes up between 7-8 usually closer to 8AM. We play for a little bit, then I get him in the car and take him to Mary’s for the day. It’s a nice, leisurely routine. After I drop him off, I head home and work for the day (or to school depending on the quarter/day etc.).

I’ve got to be honest here~ I totally did NOT fully appreciate the awesomeness of this nice leisurely routine, until YESTERDAY.

Yesterday I had to get to campus for a meeting at 8:00AM. I’m pretty sure that is one of the first times since Pax was born that I had to be somewhere that early. Okay okay, I know 8am isn’t really THAT early…but its’ definitely a deviation from our normal routine.

I had to wake Pax up. I never have to wake him up. It was so awful and so adorable at the same time. I went in his room at about 7:15 and picked him up. He immediately cuddled back in to my shoulder. SO SWEET. Then when we were about to the car he realized he was not in his crib and whipped backward in my arms. He squinted his eyes with the light and gave me this twisted, awful, “what the heck are you doing to me woman” look. It was High-larious!!! By the time we got to Mary’s he was his happy self. But let me tell ya. It was not the most pleasant car ride. Poor confused Pax!

Needless to say, I am SO thankful that I have a Full-time job that allows me to work when I want (for the most part). I can write a paper at midnight while doing laundry. I can transcribe at 6AM. I can run over to Mary’s in the middle of the day if Pax is sick. Don’t get me wrong, I still work at least 40 hrs a week… let’s be honest, it’s probably more like 50+ but the work occurs when it fits into my life and schedule.

Today I am holding on to the true blessing of my situation. Not everyone is so blessed.
