Garlic-Artichoke Pizza & BBQ Chicken Pizza

The other day Steve said he was feeling like pizza and my wheels got turning… He wanted BBQ Chicken Pizza, but I didn’t really feel like a sweet pizza. So I decided to take part of the dough to make something a bit more salty/savory. You could definitely just put these toppings on a pre-prepared crust if you’re feeling less adventurous! 🙂

Garlic-Artichoke Pizza AND BBQ Chicken Pizza
For Chicken-Garlic-Artichoke Pizza
•    ½ can quartered artichokes, roughly chopped/mashed
•    ½ chicken breast boiled & shredded
•    4 cloves of fresh garlic grated
•    1-2 scallions chopped
•    oil for sautéing & a little for the crust
•    Feta cheese 2-3 oz (plain or tomato basil flavor)
•    optional… add some spinach, olives or top with fresh tomatoes and basil after it comes out of the oven


For BBQ Chicken Pizza
•    ½ chicken breast boiled & shredded
•    1 c. BBQ sauce divided
•    ½ large red onion
•    oil for sautéing
•    Mexican cheese low fat (3 oz approx)
•    Optional… pineapple, hot sauce, ½ green pepper


Use the Kitchen Aid pizza crust recipe (add Italian seasoning to the crust…alternately, you could use a prepared crust). On a big jelly roll pan, oil & top with corn meal. Roll out crust until it will fit the rectangular pan. The bigger, the better.  Top ½ of the top of the crust with a tiny rub of olive oil. Top the other ½ of the crust with ¼ c. of BBQ (approx). Your crust is ready to go.
For CGA~ sauté the artichokes, garlic & scallions until the artichoke water has mostly evaporated & the garlic is cooked through. Spread this mixture on top of the part of the crust that has the oil on it. Top with the shredded chicken. DO NOT put the cheese on yet.

For the BBQ~ sauté red onion till soft and sweet. Mix the remaining BBQ sauce with the shredded chicken. Spread the onions & the chicken on top of the bbq side of the crust. Top with about ½ of the Mexican cheese you’re planning to use.

Bake the pizza for 15 minutes at 450 degrees. Remove from oven, put the feta cheese on the CGA side of the pizza & add the rest of the Mexican cheese to the BBQ side. Turn oven off and put the pizza back in the oven for about 2 min to melt the cheese. Cut in squares, serve & enjoy!
